I’m not sure what to call this recipe, so I’m going with “Mexican spaghetti”. I made it up last night and want to get it typed out before I forget it.

1 lb burger
1 small onion chopped
1 can chili ready tomatoes, undrained
1 can black beans, undrained
cumin to taste
chili powder to taste
salt to taste
1 lb spaghetti noodles
1 1/2 cups shredded cheddar cheese

Cook burger and onions in skillet. Meanwhile cook noodles. When burger is browned and onion is translucent, add tomatoes and beans, cumin, chili powder, and salt. When noodles are cooked, drain and add to meat mixture. Add cheese and heat through until melted. Serve.

I think I’ll add sour cream and maybe fresh green onions for garnish with the leftovers.
